Strawberry Drink

 

 

I love strawberries ! What can I say im addicted. This drink is very simple yet the pay off is so high.

 

• 1 package of frozen organic strawberries

• 1/2 cup of Maple Syrup

• Pinch of pink sea Salt

• 1 1/2 cups of filtered water

• Blend all ingredients and enjoy

 

Barbaque Dip with Dried Plantain

 

In the Caribbean plantain is a staple food in our diet. I wanted to recreate it in a raw version,so I sliced the plantain very thin using a  mandolin, then I soaked it  in  olive oil and a little salt. I then dehydrated them over night. I was pleased with the turn out. I pared them with a spicy barbecue dip,the result a crunchy savory experience.

G-living really got to this coconut lover with this episode. I really and truly love anything coconut I guess you can take the girl out of  the island but you can't take the island out of the girl.  When I seen this episode it really got me,like yes I can truly be raw and actually stay raw. I had to share this wonderful recipe and episode with my reader or readers lol.

                                                                                                  

 

Raw Banana Coconut Cream Pie

 

Crust

1/2 cup of macadamia nut

1/2 cup of shredded dry coconut

Pinch of salt

1 teaspoons of coconut oil

2 tablespoons of agave nectar

 

Crust Preparation

 

Blend first 5 ingredients in the food processor

Add more agave to stick the crust together

Line pan with saran wrap,press crust on top

Freeze the crust while preparing the filling

 

Filling

 

2 Cups of coconut meat

1/2 cup of virgin coconut oil

2-4 tablespoons of agave nectar

Coconut water (if needed)

1 tablespoon of lime juice

1/2 teaspoon of salt

1/2 teaspoon of vanilla extract or half of a vanilla bean

1-2 bananas sliced 1/2 inch

 

Filling Preparation

Blend the rest of the ingredients except the banana slices in the blender until smooth

Make sure there is enough liquid to have the ingredients swirling in a vortex

Add coconut water if needed

Take the crust out of the freezer and place sliced bananas on top of the crust

Pour filling on top of bananas

Place in the freezer for three to four hours to set

 

Run mature coconut meat through the juicer to make coconut whipped cream from the juice.

Eating out can really be a hassle when you eat a beautiful vegan diet. However because of happy Cow it has just gotten 90 percent easier. Coconut Espresso cake was such an inspirational piece of genius that I had. The two flavors really married together very well. I have to work out the kinks but when I do I will defiantly share this recipe.

Cheese and Crackers

Cheese and crackers are one of number one yummers ! My dad I have to admit has gotten me hooked on cheese and bread and cheese and crackers. When I was a child he use to break off a big piece of cheese and an equally big piece of bread and we would just wet our palate with some coke a cola. However I just couldn't continue this trend,so I made some really tasty almond crackers and dehydrated raw cheese. I have to say that these are equally tasty.
