Rebecca Carlson of Purely Delicious Magazine is such a great Lady,it was so easy working with her. I submitted two crowd pleasing recipes that I know that your going to Love. I ending up consuming the entire batch of of ice cream myself although it serves four people, it was that good.

The combination of fruits really sets this dish apart,very tasty and filling although it is quite simple.

 

 

½ a cantaloupe cut in half and scored

Hand full of washed, destemed, and sliced strawberries

½ of banana sliced

Hand full of coconut flakes   

Hand full of raw cashews

Pinch of salt

Drizzle of agave       

Place strawberries, banana, coconut flakes, and raw cashews in the middle of the cantaloupe. Drizzle with agave and sprinkle with salt and serve

I was contacted to do a piece for The Daily News however I got back to them a little late :(  But being the ambitious New Yorkers that they are they featured me any way. I was so excited because I thought that this opportunity only came along once in a llifetime and that I had missed my chance. Well I guess not !
