Caribbean bush tea is a blend of lemon grass, bay leaf and lime leaf just to name a few. In the islands this blend of tea is used traditionally in the morning with breakfast. We also used it to combat sickness like the common cold and indigestion. However my reason for boiling me a hot steamy cup was just out of a longingness to connect with a past that I never want to forget.
I brought the water to a boil and then disbursed the hot water over the stiff dried leaves that soften and danced in the cup. Then I poured some fresh macadamia nut milk into the tea and sweetened it with sucanant. The cane sugar really tasted as if I had got it from the cane factory in Barbados, all adding to this authentic tea experience.
The flavor of this tea is like lemon that has been mixed with a hint of vanilla. It is one of the smoothest teas I have ever experienced.
Bush Tea
- 1 oz of bush tea bay leaf and lemon grass
- 3 cups of water
- 1/3 cup of macadamia nut milk
- 3 tablespoons of sucanant
- Bring the water to a boil and pour over the bush tea ( lemon grass and bay leaf )
- Let it steep for 5 mins,then strain.
- Pour in the macadamia nut milk and stir in the sugar.
And... of course the best way to enjoy tea is with a sweet pastry.
Rustic Chocolate and nutmeg cookies
Nutmeg and chocolate are a match made in heaven. These cookies are dark,chewy and dense.
- 2 cups of coconut flakes
- 1 cup of coconut crystals
- 3 tablespoons of coconut oil
- 1/2 tablespooon of coconut powder
- 3 table spoons of maple syrup
- 1/2 tsp of vanilla powder
- 1/2 cup of raw chocolate
- 1/2 nutmeg grated
- 1/4 tsp of salt
Process all of the above ingredients in your blender untill the mixture formes together
Then form into balls freeze for 10 mins and serve.
Some people like their coffee, some like their tea
Some people like their chocolate and that' s enough for me
But when I rise in the morning, the only thing for me
